To our customer we are looking for oneAnalystWith communicative ability that can help illustrate the complex value chain, which the customer believes in relatively small changes in the range of a buffet.

Background:
Our customer is partners in the Norreg (Nordic Regenerative Tourism) project. The project started in 2022 and ends in March 2025. The project is financed by the Nordic Council of Ministers and is led by the Iceland Tourism Cluster.

The purpose of Norreg is to establish concrete tools for companies that want to work with relevant, accessible and measurable methods that have a clear positive impact on the site, for example on nature or our cultural treasures. The overall goal is to develop and test methods that ensure that companies across the Nordic region can use regenerative tourism as a basis in their business ideas and use tourism as a tool for the good of local society.

The target group for the use of these tools is small and micro companies, rather than small and medium -sized companies, in line with what it actually looks like in the hospitality industry in our participating regions.
Through this project, we are given the opportunity to carry out various efforts linked to regenerative tourism in collaboration with other Nordic countries. The results of the efforts are shared between the countries.

Within the project, we have carried out an effort that we called the "Breakfast Lab".By thinking about what you serve at breakfast, you have a great opportunity to influence the guest's choice and in the long term also contribute to reduced food waste. When prioritizing local raw materials in their range, you also benefit local producers and entrepreneurs. In the breakfast lab, we therefore gathered chefs and breakfast managers from meeting facilities in Skåne to help them discover new creative ways to get more local ingredients at breakfast.

Now it is time for the last part of the project and then we want to deepen the work we started in the breakfast lab. What we want to do is take a closer look at the effects of replacing an article X on breakfast with something based on local ingredients. What effects have this on the environment, such as biodiversity, the local community and the place in general. The goal is to produce an educational model that should be able to explain but above all inspire the effects of changing raw materials, such as replacing a large -scale ham with a charcoal product from, for example, a local lamb producer or replacing orange juice with apple coast.

Mission:
The contractor must, in consultation with the customer, select one or more goods/products and be able to show how a change to a more local/sustainable product can have effects on the environment, such as biodiversity and the local community and the place in general.

Target group for the assignment:
Primarily our customer and similar so -called DMOS in the Nordic countries so the delivery should be made in English.Secondary smes in the Nordic countries
